On a chilly Wednesday morning, the hustle and bustle at the Salty Goat Grill on New Leicester Highway painted a picture of hope amidst the chaos. Patrons seeking warmth and connection seeped through the doors, no doubt eager for a steaming cup of coffee. Diane Smith, a sprightly 76-year-old and lifelong resident, shared, “I hadn’t had coffee in five days, so I was having a caffeine fix.” Her wide smile, contrasted with a mostly-empty plate of hash browns, reflected the sense of comfort this little diner provided after days of makeshift meals at home.

A Community’s Spirit

Despite being relatively unscathed compared to nearby towns like Swannanoa and Black Mountain, Leicester has seen its share of challenges. Power outages and sporadic water and internet access left residents scrambling for basic needs. No one in town had complete access to all three utilities, except the Salty Goat Grill, which managed to stay operational even when the power was out for just two days thanks to their trusty generators.

Erin Vazquez, the co-owner of the Grill, said, “Normally, we offer a classic diner menu, but right now, we’re keeping it simple.” With just a few options available, the diner saw a surge in customers looking for a warm meal, proving that good food means good company, no matter the situation. Her husband, Rick, made a special trip to Johnson City, Tennessee, to stock up on groceries, and community members pitched in too—one even drove supplies from Tennessee back to Leicester!

Every Little Bit Helps

In addition to the Salty Goat Grill, other local spots like Shorties BBQ have stepped up, serving food for free or on a donation basis. The Grateful Roots Market & Deli, a beloved local market typically focused on Amish products, has also done its part, spreading kindness and support amid adversity. Their mission now includes helping the hard-hit areas of nearby towns like Marshall.

Though Leicester escaped the worst of the flooding, comfort is still hard to come by. Many residents like Keith Curry, a retired New Yorker who loves his new home, are facing their own hurdles. Even with power and water restored, he is still without internet—a situation he expects to endure for at least another week. As he clutched a biscuit to-go in a bag for his wife, he shared this thought that many echoed: “This little restaurant is a godsend.”

Real Heroes Emerge

Everyone seems to have a story to tell; whether it’s a wait for gas that took days or a desperate search for a way to charge a phone, the challenges are acute yet relatable. The real champions in this struggle? The first responders, according to Erin. “They’re putting their lives at risk for so many people,” she noted, highlighting the often untold sacrifices made during such crises.

As struggles continue and many households remain powerless, the Salty Goat Grill shines as a beacon of normalcy and warmth. Between flavors of pancakes, biscuits, and sandwiches, diners find solace in shared experiences during tough times. Their simple message loops in and out of conversations: “We’re open!” They serve more than just food; they offer a sense of community, made more important in trying times.
